Tiina Luts who has been Hotel Manager for a year, says “So far, our hotel has managed by its own. Our sale activities were concentrated on customer who himself was interested in visiting our establishment. But now, in a tight competition situation, we need to find new customers and offer and develop our products. Also, we are aiming for foreign markets to attract more customers. We have already started intensive sale in co-operation with Estonian and foreign travel agencies, developing product packages and performing various marketing activities.”

” We are very interested about tourists from Sweden”, said Kadri Jalonen, tourist co-ordinator of Ida- Virumaa & Partners. “Here are tourism attractions and activities for everyone- families, group tourist or people who value history, mixed culture, unforgettable nature and interesting food and beverage.”
The press group has made up from spa and travel, history and culture journalists who worked for internet or print media in Sweden. Many of them worked for the largest Swedish daily newspapers.
By the words of Mr Henrik Göthlin from Estonian Tourist Board, journalist found very inspiring places in Ida- Virumaa. The most impressive discovery was Narva Castle with Narva Kreenholm factory. “These attractions are like connection between Sweden and Ida- Virumaa area. Sillamäe city with an interesting architecture surprised, also Kiviõli and Alutaguse Adventure parks.”
The favourite hotel by the words of Henrik was Mäetaguse SPA & Hotel. “The best offered local food was in Avinurme Cultural Heritage Centre”, said Henrik. “The offered venison with other side dishes was very delicious. Like a fact that most of food was organic and has made by local traditions. We value provided service there, because that was warm. Like at home of grandmother.”

The medieval restaurant Olde Hansa, situated at the historic Vana-turu kael (Old Market’s neck), celebrates its 15th year of activity. During these years, the eatery has been thriving in the restaurant business as well as in other domains – an additional four restaurants, the Medieval Shoppe and an almond making workshop have been opened. As appropriate for a birthday year, townsfolk as well as visitors can look forward to various special events.
The spectacle The Monk and Margarete, performed during restaurant Olde Hansa’s theater feast, breathes life into the most scandalous love story in medieval Tallinn. The play is based on actual events that shocked the town in 1464-1477. In front of the very eyes of the guests of the feast, tallinners that lived nearly 600 years ago once again come to life to tell an eonian story of faith, expectations that came true only to be shattered again and love that expands across centuries.
In honor of the 95th birthday of the Republic of Estonia, Olde Hansa’s sister restaurant Estlander boast a special menu by Madam Maria Laidoner, the wife of the first Commander-in-chief of the Estonian Army Johan Laidoner, that delighted the taste buds of high visitors of the sate and diplomats over 60 years ago. Mrs. Maria Laidoner skillfully combined Estonian cuisine of the time and her Polish nobiliary knowledge, culminating in restaurant Estlander’s three course Estonian inspired meal with Jerusalem artichoke, wild boar ragout and forest berry sabayon.
In the fall of 2013, MTÜ Tallinna Turismiedendamise Liit (non-profit association Tallinn Tourism Advancement Association) in collaboration with Olde Hansa restaurants will host a high-level international tourism conference Tallinn - a European Tourism Destination (Tallinn Euroopa turismi-linnaks), the participants of which include representatives of the Estonian sate and the city of Tallinn as well as international tourism related enterprises.
All in all, Olde Hansa’s restaurants Waggehus, III Draakon (III Dragon) and Clazz form a one-of-a-kind experience hub full of cheer at the Old Market’s neck in Tallinn’s Old Town with vivacious medieval occupation buzzing to the cheerful calls of the heralds and the savory smell of medieval spices, evaporating from the sweet almond stuff, prepared warm right there in the middle of it all.
Based on this year’s economic forecast, the Olde Hansa restaurants group is planning an approximately 17% sales growth for next year. The sales growth estimates adhere to the principal of conservatism as, while reaching for the growth goal, the outfit’s main objective always remains the same – to exceed the customers’ expectations. Guided by this standpoint, a set of new unique medieval experience expeditions are currently being prepared, the guests of which will be taken through medieval activities to period-specific happenings, harmonized by a palatable, verbal and musical accord.
Olde Hansa, Waggehus, Clazz, III Draakon and Estlander restaurants employ a total of 270 attendants; the number of workers in the summer increases 30-40% and approximately 50% of that extra staff remain as members of the standing team.
The turnover for Olde Hansa restaurants group is an approximate 8.4 million euros and the group makes 400 000 euros in profit.

To complement the medieval restaurant Olde Hansa, opened in December, 1997, the Medieval Shoppe Krambude was opened soon after. The medieval store was necessitated by visitors’ increasing desire to purchase medieval tableware of their own. The next to start operation were Olde Hansa’s almond carts, preparing, following a medieval recipe, the exceedingly popular almond sweets called Prunus Dulcis and, as the medieval storehouse could no longer facilitate all its visitors, restaurant Waggehus, an extension of the Olde Hansa restaurant.
Eight years ago, the successful restaurant-jazz club Clazz opened its doors as part of the restaurants group, attracting guests with an all-night a la carte menu to complement the restaurant’s nightly live music.
Three years ago, a period-themed medieval tavern III Draakon opened in the Town Hall building and restaurant Estlander, accommodated in the house of a medieval tradesman Johan Hopner, that offers dishes of old Estonian cuisine started business a year ago.
In addition, Olde Hansa Production i.e. production hall operates in Jüri borough, manufacturing almond products, marketed in Estonia’s large retail chains, and nut mixes that are sold abroad.
